Method Description

This method determines cholesterol content in food samples. Lipids are released from the sample by acid or base hydrolysis and extracted into mixed ethers. Fatty acid-containing compounds are then interesterified to form fatty acid methyl esters (FAMEs) and free sterols. The components are separated and quantified by gas chromatography (GC) with flame ionization detection (FID). Cholestane is added prior to hydrolysis and used as an internal standard for quantitation.
