Method Description

This method determines free fatty acids (FFA) as an indicator of hydrolytic rancidity in oils and food products. Hydrolytic rancidity results from the enzymatic or chemical hydrolysis of triglycerides into free fatty acids and glycerol. Lipids are extracted from the sample using an organic solvent and titrated with standardized sodium hydroxide. Results are expressed as percent free fatty acids, calculated as oleic acid for most fats and oils. Coconut and palm kernel oils are reported as lauric acid, and palm oil is reported as palmitic acid.
