Method Description
A homogeneous sample is mixed with water containing an internal standard, heated, and the resulting headspace is analyzed by gas chromatography to quantify hexanal. As a by-product of fatty acid oxidation, hexanal serves as an indicator of lipid oxidation and oxidative rancidity in food products and ingredients.
