Method Description
This method determines phytic acid content in food samples. Phytic acid is extracted under acidic conditions and enzymatically hydrolyzed using phytase and phosphatase to release phosphorus. The released phosphorus is quantified colorimetrically using ammonium molybdate. Free (inorganic) phosphorus is measured separately and subtracted from the total to determine phosphorus derived from phytic acid. Phytic acid content is then calculated from the released phosphorus. Accurate sample descriptions or estimated phytic acid levels are recommended to support appropriate analysis.
